This method of ageing meat is known as dry ageing. Dry ageing beef is done by hanging meat in a controlled, closely watched, refrigerated environment. If you ever had a good, aged steak, you know it is more tender and flavourful than what you can typically buy in the supermarket. The reason for this is that ageing allows natural enzymes to breakdown the hard connective tissue in meats and for water to evaporate away, concentrating the flavour especially in the steaks. Our wide array of sausages are very popular, ranging from your classic Old English to the more novel Pork and Marmite. All made with the same local, quality meat, fresh herbs and wonderful flavour, sausages are a year round, all weather favourite. We also produce our own traditionally cured bacon, cook our own hams and our rolled pork shoulder is a Park household favourite (with extra crackling, obviously!). Woods Farm are our primary supplier of Oxfordshire Pork. The Duroc x Landrace pigs are sourced from an RSPCA freedom food accredited herd, free from antibiotic growth promoters, hormones and meat and bone meal.
